Thanksgiving Quesadillas are perfect for when you want dress up those turkey leftovers in a fresh way. The following recipe will make two quesadillas, but you can always change it up.
Ingredients:
1 cup shredded turkey
1/2 cup cheddar or Mexican blend cheese
2 tortillas
2 tbs. cranberry sauce
seasonings of choice (chili powder, pepper, salt, etc.)
2 diced mushrooms
1/4 of a white onion, diced
1 clove garlic
1st: Heat up a olive oil in a pan.
2nd: Cook onions and mushrooms with a garlic clove and seasonings, set aside.
3rd: Assemble quesadilla- put turkey, cheese, and onion mushroom mixture on half of a tortilla smeared with cranberry sauce.
4th: Gently place quesadilla into pan, fold over and cook on one side for about 2 minutes. Flip and repeat.
5th: Slice and enjoy!
